Made from selected Clairette, Marsanne, Ugni Blanc and Sauvignon Blanc grapes, matured for several months in barrels, the Esprit de Famille incarnates the knowledge acquired over the generations at Domaine du Paternel. It has a white blossom and white-fleshed fruit nose with a toasty undertone. On the palate it shows a voluminous, ample and rounded development on which are built aromas of citrus, spice and flint. With a lovely length and astonishing freshness, it is a great example of the Cassis terroir.
With food it requires a spread of dishes that are its equal: scrambled eggs with truffles, crayfish gratin, grilled lobster, cream of monkfish or sea bream or even a chicken supreme. It is also wonderful with dry goat’s cheese or even a well-aged Comté.
