Esprit de famille
AOC Cassis
The estate’s white Esprit de Famille cuvée is vinified and aged in barrels. This Cassis AOC wine was birthed out of a desire to innovate by drawing from family savoir-faire.
Origins
Esprit de Famille is produced from parcels of our oldest Clairette, Marsanne, Ugni Blanc and Sauvignon vines, as the grape juice must be rich and structured enough to be worth vinifying and maturing in barrels. This style of winemaking guided our plot selection process.
Terroir
The Clairette vines reach deep into the ground, growing in clay-limestone soil on hillside slopes, while the Marsanne vines are found at the bottom of the valley. The Ugni Blanc grapes are sourced from our oldest parcels (40-50 years old) and the Sauvignon from vines resting on marls where their grapes can ripen slowly. In the winery, the juices are left to settle for twelve hours after gentle pressing. Fermentation is done in oak barrels for about a month. The delicate lees are preserved and dispersed through stirring, giving the wine richness and intensity. The wines mature for nine months.
Pairing
Enjoy with superior quality fish, sea bass, flounder or striped bass prepared grilled or with sauces; monkfish tail or Brittany-style crayfish. It also pairs well with white meat dishes, such as a French veal marengo or free-range chicken breast in a cream sauce. At the end of a meal, it is a wonderful accompaniment to a fresh goat cheese board.
