ROSÉ 2021 AOC CASSIS IS SOLD OUT.
Since the 60s, the Santini family has cultivated a few parcels of red grapes on its terraces in Cassis. These are used to craft aromatic and complex rosé wines.
This rosé is mainly composed of Grenache grapes grown in our Cassis appellation vineyard, with Cinsault rounding out the blend.
Planted in clay-limestone soil, the vines used for this rosé benefit from a sunny, dry climate. The grapes are harvested only in the morning and transported in small crates, then gently pressed. Winemaking is done in thermo-regulated steel and concrete vats. Each varietal is vinified separately and blended at the end of the year.
This rosé pairs perfectly with Mediterranean cuisine and grilled fishes like red mullet and John Dory. It is also delightful as a before-dinner libation.
- Pale blush, clear and luminous.
- Very fragrant, with small red berry notes.
- Bold and juicy with satisfying length, fleshy and well-balanced.
The composition of varietals and proportions vary from year to year.
