Origins
This cuvée was crafted in tribute to “Papet” — our father and grandfather, a dedicated winemaker and a true passionate soul.
Jean-Pierre Santini, lovingly called "Papet" by his family, was deeply devoted to his estate. From his very first vinification in 1962 until his passing in July 2022, he dedicated his entire life to it.
We selected our finest parcels of white grapes from our vineyards in Cassis and Saint-Cyr-sur-Mer.
Terroir
The Marsanne, Rolle, and Ugni Blanc vines come from parcels planted in valley floor soils, where the root systems draw water and minerals from deep underground. The Clairette grapes are sourced from a hillside parcel with clay-limestone soil.
The grapes are harvested by hand exclusively in the morning, then transported in small crates to be gently pressed at low pressure.
To preserve the cuvée’s freshness and aromatic complexity, we chose to vinify it in stainless steel tanks at 15°C.

It pairs very well with fish tartares or grilled fish such as sea bream, sea bass, and turbot.
