Terroir
Domaine du Paternel produces an extra virgin olive oil made from its own olive trees, located along the edges of vineyard parcels and on terraced slopes (restanques) in the communes of Cassis and Saint-Cyr-sur-Mer.
The harvest takes place early in the season to produce a “green fruit” style oil. The olives are picked while still green, in early October, before they begin to turn black.
Our olive oil is made from a blend of several olive varieties: Brun, Aglandau, Cayanne, and a few other Provençal types.
Tasting
This green-hued oil with golden highlights reveals aromas of hay, candied lemon, and pistachio on the nose.
On the palate, it opens gently with notes of artichoke and fresh herbs, followed by a peppery finish.
Its spiciness enhances its flavorful intensity.
Pairing
This oil is the perfect seasoning for Mediterranean dishes, seasonal salads, carpaccios, and even fresh cheese.
