Produced from grapes sourced from our Côtes-de-Provence plots, this rosé strikes a balance between freshness and sweetness. It is perfect as an aperitif and a lovely complement to Mediterranean and Asian dishes.
origins
The grapes come from our Saint-Cyr-sur-Mer vines, certified organic since 2019.
The Santini family is earnest about cultivating all of its vineyards in accordance with organic farming practices, so that the full potential of its terroir can be brought forth in the wine. Grenache, the main varietal in the composition of this wine, is combined with Cinsault. Both are harvested manually then vinified in our winery in Cassis.
Terroir
The two grape varieties in this rosé are planted, for the vast majority, on large expanses of clay-limestone soil that benefit from constant sunshine. The Grenache grapes are the first to be harvested, once they reach full maturity.
The Cinsault follows about two weeks later. They are cooled and destemmed before the grapes are pressed whole, permitting the wine to take on its subtle pink color. Winemaking is done in thermo-regulated steel and concrete vats. Each varietal is vinified separately and blended at the end of the year.
