A terroir suited to growing white grape varietals, the Cassis vineyards express their full potential in this Blanc de Blancs. From one generation to the next, this star cuvée has made the estate’s reputation. It has accompanied fine dining experiences for almost 70 years.

Origins

The Blanc de Blancs is made mainly from our Clairette, Marsanne and Ugni Blanc grape varieties. The vines are cultivated in our AOC vineyard in Cassis. Clairette gives it fullness, aromatic complexity and freshness, while Marsanne provides its fruit flavors, structure and good length. Ugni Blanc complements the two main varietals, adding fruit and freshness.

Terroir

A large part of the Cassis vineyards is grown on hillside terraces supported by dry-stone walls known as restanques. The vines take root in clay-limestone soil that gives the wine its characteristic mineral richness.
Close pruning, along with removing the sucker-shoots, allow us to obtain the small yields required to ensure the consistently high quality of this cuvée.
The grapes are harvested only in the morning when temperatures are at their lowest, in order to preserve peak flavor.
Winemaking is done in thermo-regulated steel and concrete vats. Each varietal is vinified separately, then blended at the end of the year to create a new vintage.

Pairing

This wine pairs very well with shellfish, seafood, grilled fish and Bouillabaisse. With its crisp taste and delicate flavors, it is also delightful as a before-dinner libation. After two to three years of cellaring, it develops a fuller body and buttery notes. Also great with oily fish like flounder or sea bass, and pays nice tribute to a goat cheese board.

Tasting

Color: Pale yellow, bright and clear.
Nose: Very fragrant, with citrus notes and white flower bouquet.
Palate: Complex with notes of citrus and white stone fruits. Very nice length underscored by crispness.
